Mission Accomplished {30x30}: Learn how to bake souffle
I think it was reinforced by that movie Because I Said So, but a girl just has to know how to bake a souffle, right? I’d never had souffle before yesterday and I’d certainly never tried to make it, but I’ve also thought that a souffle would be something worth knowing how to bake. So when I made my 30 by 30 list back in December, souffle was right near the top.
Thanks to a super simple recipe (via Smiling Fork) and a tiny bit of inspiration from theflightrisk, last night I learned baked souffle. I used 1/2 milk and 1/2 super dark chocolate as it’s all I had in the pantry. And it was delicious. So delicious.
Mission accomplished. Souffle. Bam.

Redhook Beers, wine, soda and BBQ food will be available in the Beer Garden until the movie starts. Gates and taps open at 6 pm; movie starts at dusk. Lawn chairs, blankets and picnics allowed. No pets, BBQs or outside alcohol.
Carillon Point | Saturdays, Admission $5 (benefits Hopelink)
Venue opens one hour before dusk. Lawn chairs ideal as the seating is on concrete. Some chairs provided. $5 admission will benefit Hopelink along with concessions sales.

Simple Pleasures: Dancing in the Texas Rain
Only the Lord could know me so well as to gift me with the opportunity (I had so desperately, albeit quietly been praying for) to dance in the warm Texas rain. It is the most beautiful thing I’ve done in a very long time. There is nothing more beautiful than thunder & lightning sharing the heavens with sunshine & rainbows. My God is so complex & stunning, His beauty humbles me beyond words.

I’ve lived in the PNW for 3 years now, and I’m a bit ashamed to say that I haven’t explored very much. Sure I’ve tasted the local fare, been to the top of the Space Needle and tried just about every non-Starbucks coffee shop I can find, but outside of the city life, I haven’t seen much. This summer seemed like a perfect time for Una and I to get started exploring.
On July 24, we took a day-trip to Whidbey Island, WA, a quaint, family (and pup)-friendly town with sweeping views of Mt. Rainier and just a short ferry-ride from Seattle. Also, according to Washington State Tourism, the drive through Whidbey is one of the state’s scenic byways. We documented pieces of our journey:

I snapped these last year over labor day, my Nana’s birthday. I didn’t think much of them at the time, but I can’t stop looking at them now. My Nana passed away in June and we all miss her so much. I can still see her sitting at my parents’ kitchen table singing: “Just a few more weary days and then, I’ll fly away…”
Oh Nana. I love you.
Simple Pleasures: Joe T’s, Fort Worth, TX
Prompted by a friend’s move from Seattle to Texas, I find myself reminiscing about Texas. Here’s a quick memory turned recommendation for a good time in Fort Worth, TX.
- Pick a nice, breezy day and if you’re not there already, go to Fort Worth. Invite friends.
- Follow the red brick road to the Stockyards.
- Find the building painted with directions to Joe T Garcia’s.
- Score parking.
- Wait in line (up to about 2 hours; it’s totally worth it. if you’re getting antsy, grab yourself a margarita).
- Don’t wimp out and opt for a less-crowded seat inside the actual restaurant. Be patient and sit on the patio (next to the pool is best).
- Order a pitcher of margaritas.
- Ask for Anson.
- Tell him Carey Spence from Pappadeaux says HI.
- Indulge yourself with one of the 2 things they have on the menu –fajitas or enchiladas - served family style.
- People watch. Notice the kids from TCU, the families who’ve been dining at this place since it opened, the rehearsal dinner or birthday parties surely going on, etc.
- Listen to the sounds of the vibrant life, love and laughter that is surely sitting next to you.
- Find yourself enjoying one of the finest things Texas has to offer.
